St. Lucian One-Pot (Hawai’i Style)

One-pot meals are fantastic for when you like to cook according to taste and don’t want a whole bunch of dishes to wash when you’re finished.

The recipe below comes from my friend Michelle, who lived in St. Lucia and brought this meal to one of our potluck parties in Honolulu. I think I devoured it before anyone else had a chance to taste it.

  • Soak 16 ounces of red or mixed beans and lentils overnight, changing the water periodically.
  • Boil beans in a large pot for 2 hours with chopped garlic, freshly grated ginger and onions.
  • Add a sliced medium potato and a portion of dasheen (Chinese taro).
  • 20 minutes later, add 3 chopped carrots, 2 stalks of chopped broccoli and/or fresh green beans, green onions, etc. and simmer for 15 minutes more.
  • Add water and spices (salt, pepper, *hot* pepper sauce, a touch of curry, and cayenne pepper) as needed.
  • Serve as a hearty meal and enjoy!
