Granola Banana Bread

I’m really quite content eating granola for breakfast, lunch, dinner and several snacks in between, so turning granola into a bread is simply more yumminess for me to eat.

But, well…maybe that’s just a bit too much fiber.

Ahem.

If you crack the eggs and help with the measurements and oven stuff, then you can sit back and do all the listening while your little ones do all the mixing and talking.

(I’m wondering: if you substitute soy milk for the eggs and oil for the margarine, this might still turn out just fine, yes?)

Ingredients

  • 2 eggs
  • 1½ cups mashed bananas (2-3 medium)
  • 2/3 cup honey
  • ½ cup margarine/butter (softened)
  • 2 cups flour
  • 1½ cups granola cereal, crushed
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cloves

1) Mix eggs, bananas, honey and margarine in a large bowl.

2) Stir in remaining ingredients.

3) Pour into a greased loaf pan.

4) Bake at 350 °F for 60-70 minutes or until a toothpick inserted in the center comes out clean. Cool completely before removing from the pan and slicing.
