Exotic Hawaiian Honu Cookies

Love turtles, please don’t eat them.

Unless they’re cookies.

Then you must happily eat them with great gusto.

Exotic Hawaiian Honu Cookies

  • 4 cups flour
  • pinch of salt
  • 2 teaspoons baking soda
  • ½ cup butter or margarine
  • 1/3 cup packed brown sugar
  • ¼ cup sugar
  • ¼ cup light molasses
  • 2 tablespoons light corn syrup
  • ½ teaspoon orange flavoring
  • 1 beaten egg

1) Preheat oven to 350F (175C). Grease baking sheets.

2) Sift dry ingredients into a large bowl. Make a cavity in the center.

3) Put margarine, sugars, molasses and corn syrup in a saucepan: stir over medium heat until margarine melts. Pour this mixture into cavity in dry ingredients. Add the beaten egg. Mix and form a dough.

4) Knead lightly to make dough smooth.

petroglyphs5) Roll out to approximately 1/8 inch thick. Cut honu from dough. (You can simply form heart-shaped cookies if you were enormously excited about this recipe and forgot to locate your honu cookie cutters.)

6) Bake 12-15 minutes or until the cookies spring back when lightly pressed.

Makes about 12 cookies.
