Mini Mocha Cheesecakes

Of course you’ll skip the espresso when you make this with kids. Average happy kids naturally bounce all over the place already; there is no need to have caffeine-influenced bouncing.

Average adults, however, might need some help bouncing all over the place. For them, triple the espresso.

Mini Mocha Cheesecakes

1) Cream together for 5 minutes with electric mixer: 2 8-ounce packages cream cheese at room temperature, 2/3 cup sugar, 1 teaspoon vanilla, 2 large eggs, 3-4 tablespoons espresso or very strong coffee.

2) Fold in 2 tablespoons semisweet chocolate shavings. Set aside.

3) Line 12 muffin tins with paper baking cups.

4) Place a thin chocolate wafer or shortbread cookie in bottom of each cup.

5) Spoon cream cheese mixture evenly into the 12 cups.

6) Bake at 350F for 15-20 minutes.

7) Rest for 10 minutes, then chill.

8) Before serving, garnish each with a raspberry and 1 teaspoon semisweet chocolate shavings.
