Pineapple Avocado Guacamole

I like avocados so much, I think I might have to devote a whole week or two to avocado recipes!

Note that this recipe can be too spicy for little tongues, so start mild: make it without the jalapeño pepper and the hot sauce. You can always add those later.

a) Toss:

  • 1 cup ¼-inch diced fresh pineapple
  • 2 tablespoons chopped fresh mint
  • 1 minced unseeded jalapeño pepper

b) In another bowl, mix:

  • 2 large 3/8-inch diced avocados
  • 1 tablespoon chopped fresh cilantro
  • 2 sliced scallions
  • 1 tablespoon orange juice
  • zest of 1 lime
  • 1-2 teaspoons hot sauce
  • ¼ teaspoon salt

c) Chill both mixtures for 1 hour, then combine them.

d) Serve with grilled pita or tortilla chips.
